Beetroot, Feta & Parsley Mint Salad
Experience the health benefits of this delicious fresh Beetroot, Parsley, Mint, and Feta Salad, crafted with seasonal produce. This vibrant winter salad not only bursts with flavour but also supports your wellbeing with locally sourced, nutrient-rich ingredients.
Ingredients:
- 4 Beetroots, peeled & cut into large chunks
- 1 x 400g can Lentils
- ½ Red onion, sliced
- 1 cup Feta, cubed
- 1 ½ cups Fresh parsley
- ½ cup Fresh mint
Dressing:
- 2 tbsp Olive oil
- 1 tbsp Apple cider vinegar
- 2 tsp Honey
Method:
- Preheat oven to 180 degrees.
- Add beetroot to a baking tray, drizzle with olive oil and roast for 30-40 minutes or until softened.
- Add lentils, red onion, feta, parsley and mint to your décor container.
- Stir to combine.
- In a separate small bowl, combine olive oil, apple cider vinegar and honey.
- Top salad with roasted beetroot and drizzle with dressing.
- Stir to combine salad.
