Vietnamese-Inspired Chicken & Herb Salad
A fresh, zesty Vietnamese-inspired chicken salad packed with crisp veggies, fragrant herbs, and a punchy lime dressing, perfect for a light yet satisfying lunch.
Ingredients
Serves: 1
Salad
- 1 cup cooked chicken (shredded or sliced)
- 1 cup finely shredded cabbage (or salad mix)
- 1/2 carrot, julienned
- 1/4 cucumber, thinly sliced
- 1/4 capsicum, thinly sliced
- 2 tbsp red onion, very thinly sliced
- 1/3 cup fresh herbs (mint + coriander work great)
- 1 tbsp red chilli
Dressing
- 1 tbsp fish sauce
- 2 tsp lime juice
- 2 tsp rice vinegar
- 1 tsp brown sugar
- 1/2 small garlic clove, minced
- A few slices chilli (optional)
- 1–2 tsp water
Method
- Mix dressing - Stir everything together until the sugar dissolves. Taste and tweak, should be zingy, slightly sweet, and savoury.
- Assemble salad - In a bowl or container, combine cabbage, carrot, cucumber, capsicum and onion.
- Add protein & herbs - Toss through the chicken and herbs.
- Dress just before eating - Pour over dressing and toss well. Let sit for a couple minutes if you can.
