Vietnamese-Inspired Chicken & Herb Salad

A fresh, zesty Vietnamese-inspired chicken salad packed with crisp veggies, fragrant herbs, and a punchy lime dressing, perfect for a light yet satisfying lunch.

Ingredients
Serves: 1

Salad

  • 1 cup cooked chicken (shredded or sliced)
  • 1 cup finely shredded cabbage (or salad mix)
  • 1/2 carrot, julienned
  • 1/4 cucumber, thinly sliced
  • 1/4 capsicum, thinly sliced
  • 2 tbsp red onion, very thinly sliced
  • 1/3 cup fresh herbs (mint + coriander work great)
  • 1 tbsp red chilli

Dressing

  • 1 tbsp fish sauce
  • 2 tsp lime juice
  • 2 tsp rice vinegar
  • 1 tsp brown sugar
  • 1/2 small garlic clove, minced
  • A few slices chilli (optional)
  • 1–2 tsp water

Method

  1. Mix dressing - Stir everything together until the sugar dissolves. Taste and tweak, should be zingy, slightly sweet, and savoury.
  2. Assemble salad - In a bowl or container, combine cabbage, carrot, cucumber, capsicum and onion.
  3. Add protein & herbs Toss through the chicken and herbs.
  4. Dress just before eating - Pour over dressing and toss well. Let sit for a couple minutes if you can.
