The Ultimate Egg & Bacon Roll

There’s something magical about the classic combo of crispy bacon, soft egg, and a perfectly toasted muffin—it’s the kind of breakfast that makes you want to slow down and savour every bite. Whether you’re fuelling up for a big day or treating yourself to a lazy weekend brunch, this Ultimate Bacon and Egg Muffin is stacked with flavour, texture, and a whole lot of comfort. Think café-style vibes, made right in your own kitchen.



Serves: 4 | Cooking time: 7 minutes

Ingredients:

  • 8 rashers middle bacon
  • 4 eggs
  • ½ cup tomato relish
  • 2 tsp hot sauce
  • 4 white bap rolls, split
  • 1 avocado, sliced
  • 2 cups baby spinach leaves
  • 100g Provolone cheese, finely sliced


Method:

  1. Cook the bacon rashers in a pan on the stove, until crisp. Chop into pieces.
  2. Fill the base of the Microsafe® Steam Egg Poacher or your Microsafe® 3-in-1 Egg Cooker with boiling water up to the line. Sprinkle the inside of the cups with oil, then crack an egg into each. Add boiling water up to the line, then fit the lid and microwave on high power for 1 minute and 20 seconds. Allow to rest for one minute.
  3. Mix the tomato relish and hot sauce, then spread on the baps. Top with avocado, spinach and cheese, then dress with bacon and egg.
