Indulgent Sticky Date Pudding
Rich, gooey and baked right in your Décor Vent & Seal Glass, these Sticky Date Puddings are portion-perfect, easy to make, and even easier to devour. We’re serving up sweet satisfaction in single portions, because some things are just too good to split.
Ingredients | Servings: 1-2 (depending how generous your portion is)
For the pudding:
- 6 dates, roughly chopped
- ½ cup boiling water
- ¼ tsp bicarbonate of soda
- ¾ cup self-raising flour
- 2 tbsp brown sugar
- 2 tbsp butter, melted
- 2 tbsp milk
- 1 egg, whisked
- 1 tsp vanilla extract
To serve:
- Ice cream
For the caramel sauce:
- ½ cup cream
- ½ cup brown sugar
- Pinch of salt
Method:
- Preheat oven to 170°C.
- In a small bowl, add dates, boiling water and bicarbonate of soda. Set aside for 5 minutes.
- In your Décor Vent & Seal Glass Container, combine self-raising flour and brown sugar.
- Add melted butter, milk, whisked egg and vanilla extract to the dry ingredients. Mix well.
- Drain the liquid from the softened dates and add them to the mixture. Stir to combine.
- Bake for 15–20 minutes or until a skewer inserted into the centre comes out clean.
- While the pudding is baking, make the caramel sauce. In a saucepan, bring cream, brown sugar and salt to a boil. Reduce heat and stir continuously for around 5 minutes, until thickened.
- Once you pull the pudding out of the oven, poke holes over the top with a skewer and pour over the warm caramel sauce.
- Serve with a scoop of ice cream and enjoy your delicious sticky date pudding!
