Hot Honey Salmon Bites with Baked Rainbow Veggies
This easy salmon recipe with hot honey glaze and colourful baked vegetables is the perfect healthy weeknight dinner idea. Made with fresh salmon fillets, garlic, paprika, and a touch of sweetness from honey, these Hot Honey Salmon Bites are packed with flavour and ready in under 30 minutes. Paired with rainbow baked veggies like broccoli, zucchini, and capsicum, this wholesome dish is both nutritious and satisfying. Whether you're meal prepping or looking for a quick dinner, this salmon and vegetable tray bake makes clean-up a breeze and tastes as good as it looks.

Hot Honey Salmon Bites
- 2 x Salmon Fillets, skin off, diced into cubes
- 2 Garlic Cloves, minced
- ¼ cup Honey
- 1 tbsp Butter or Ghee
- 2 tsp Paprika
- Pinch Salt & Pepper
- Fresh Herbs, finely chopped
Rainbow Baked Veggies
- 1 Red Onion, diced
- 1 Broccoli Head, cut into florets
- 1 Zucchini, sliced
- ¼ Yellow Capsicum
- ¼ Red Capsicum
- Oil/Butter, drizzled
- Salt & Pepper, to taste
Method:
- Preheat oven to 180 degrees.
- In your Thermoglass container add salmon, garlic, honey, butter, paprika, salt and pepper. Stir to coat salmon.
- In another Thermoglass container, add red onion, broccoli, zucchini, yellow and red capsicums. Drizzle with oil/butter and season with salt and pepper.
- Bake in the oven for 15-20 minutes or until salmon is tender and roast vegetables are tender.
- Serve hot honey salmon bites with baked vegetables and a fresh salad. Optional: add cooked rice as a side using the Microsafe Rice Cooker.
