Savoury Snack Muffins

These super simple spinach & three cheese muffins are a perfect breakfast idea, lunchboxes filler, or afternoon savoury snack! They’re a great way to sneak in some extra vegetables and can be enjoyed warm or at room temperature.


Ingredients:

  • 250g frozen spinach
  • 2 large eggs
  • 310ml buttermilk
  • 1 cup self-raising flour
  • 1 cup wholemeal self-raising flour
  • 100g butter, melted
  • 150g smooth ricotta
  • ⅓ cup grated cheddar cheese (reserve some for topping)
  • 100g feta cheese, crumbled (reserve some for topping)
  • Pantry Staples: 1 tsp chicken stock powder, salt, white pepper


Method:

  1. Preheat your oven to 180°C.
  2. Grease a muffin tin or line it with baking paper.
  3. Place the frozen spinach in a heatproof bowl and cover it with boiling water. Let it sit for 1 minute to blanch. Drain, let cool slightly, then squeeze out excess water and coarsely chop.
  4. In a large bowl, whisk together the eggs and buttermilk. Stir in the spinach and chicken stock powder until well combined.
  5. In a separate bowl, sift the self-raising flours and season with salt and white pepper. Make a well in the center of the dry ingredients.
  6. Pour the buttermilk mixture into the flour well. Add the melted butter, ricotta, grated cheddar, and crumbled feta. Reserve some cheddar and feta for the topping. Mix gently until just combined; avoid overmixing.
  7. Divide the batter evenly into the prepared muffin tin. Sprinkle the reserved cheddar and feta on top of each muffin.
  8. Bake in the preheated oven for 25 minutes, or until firm and golden brown. To check doneness, lightly press the top—it should spring back.
  9. Allow the muffins to cool slightly before removing them from the tin.


TOP TIP: To freeze, place muffins in your sealedTellfresh container for up to 2 months. Reheat from frozen in the microwave for 30 seconds to soften.
