Salmon, Fennel & Apple Salad
This light, refreshing salad combines fresh Aussie ingredients like fennel and crisp apple with rich, smoked salmon – an easy, flavourful dish for warm days.
Ingredients:
- 200g smoked salmon, sliced
- 1 fennel bulb, thinly sliced (reserve some fronds for garnish)
- 1 large green apple (such as Granny Smith), thinly sliced
- 4 cups mixed salad greens
- 1/4 cup almonds, toasted and roughly chopped
- 1/4 cup fresh dill, roughly chopped
Dressing:
- 3 tbsp extra virgin olive oil (Australian-grown)
- 1 tbsp lemon juice (freshly squeezed)
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions:
- Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
