Salmon, Fennel & Apple Salad

This light, refreshing salad combines fresh Aussie ingredients like fennel and crisp apple with rich, smoked salmon – an easy, flavourful dish for warm days.


Ingredients:

  • 200g smoked salmon, sliced
  • 1 fennel bulb, thinly sliced (reserve some fronds for garnish)
  • 1 large green apple (such as Granny Smith), thinly sliced
  • 4 cups mixed salad greens
  • 1/4 cup almonds, toasted and roughly chopped
  • 1/4 cup fresh dill, roughly chopped

Dressing:

  • 3 tbsp extra virgin olive oil (Australian-grown)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  2. Assemble the Salad: In a large bowl or platter, layer salad greens, fennel, apple slices, smoked salmon, and almonds.
  3. Dress and Garnish: Drizzle the dressing over the salad and gently toss. Garnish with fresh dill and reserved fennel fronds.
