SERVES 2-4
Ingredients:
- 100g Halloumi, slices
- 2 cups Salad Leaves
- 1/3 cup Pecans, roughly chopped
- ½ cup Blueberries
- 6 Strawberries, halved
- ½ Cucumber, peeled into ribbons
- ¼ Red Cabbage, shredded
Dressing:
- 3 tbsp Extra Virgin Olive Oil
- 1 Lemon, juiced
- 2 tbsp Tahini
- 1 tsp Oregano
Method:
- Heat a frying pan and drizzle with oil.
- Add halloumi and cook until lightly golden on each side.
