Protein Breakfast Slice

Serves: 12 slices
INGREDIENTS
Base
- 1 cup Cashews
- ½ cup Protein Powder (we used vanilla whey protein)
- 2 tbsp Water
- 1 tbsp Peanut Butter
- Pinch of Salt
Filling
- 1 cup Greek Yoghurt
- 1 tbsp Rice Malt Syrup
- 1 tsp Vanilla Extract
- ½ Lemon, zest & juice
Top
Purple
- ½ cup Blackberries
Yellow
- ¼ Mango
Green
- 2 tsp Greek Yoghurt
- 1 tsp Green Matcha
- ½ tsp Maple Syrup
Method:
- Blend all base ingredients until combined.
- Press evenly into your Tellfresh containers. Freeze whilst preparing the next layer.
- In a bowl, combine all filling ingredients. Pour over base and return to freezer whilst preparing the top layer.
- Blend topping ingredients separately to retain each colour until smooth.
- Pour on top of filling layer and swirl through with a skewer.
- Return to freezer until firm (approximately 2 hours). Cut each container into four portions. Keep stored in the refrigerator.
