Protein Breakfast Slice

Serves: 12 slices

INGREDIENTS

Base

  • 1 cup Cashews
  • ½ cup Protein Powder (we used vanilla whey protein)
  • 2 tbsp Water
  • 1 tbsp Peanut Butter
  • Pinch of Salt

Filling

  • 1 cup Greek Yoghurt
  • 1 tbsp Rice Malt Syrup
  • 1 tsp Vanilla Extract
  • ½ Lemon, zest & juice

Top

Purple

  • ½ cup Blackberries

Yellow

  • ¼ Mango

Green

  • 2 tsp Greek Yoghurt
  • 1 tsp Green Matcha
  • ½ tsp Maple Syrup


Method:

  1. Blend all base ingredients until combined.
  2. Press evenly into your Tellfresh containers. Freeze whilst preparing the next layer.
  3. In a bowl, combine all filling ingredients. Pour over base and return to freezer whilst preparing the top layer.
  4. Blend topping ingredients separately to retain each colour until smooth.
  5. Pour on top of filling layer and swirl through with a skewer.
  6. Return to freezer until firm (approximately 2 hours). Cut each container into four portions. Keep stored in the refrigerator.
