Iced Vovo Froyo Sandwich

Craving a sweet treat with a nostalgic twist? Meet your new summer obsession: the Iced Vovo Frozen Yoghurt Sandwich. Inspired by the classic Aussie biscuit, this chilled delight layers creamy yoghurt, raspberry jam, and coconut between two soft cookies for the ultimate indulgence—with a refreshing frozen finish. It’s the perfect make-ahead dessert for entertaining or a cheeky afternoon pick-me-up. Servings: Approx 15 Sandwiches 
Ingredients:

  • 2 cups Greek Yoghurt (discarding any liquid if possible, this will make the froyo creamier)
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 3 punnets Fresh Raspberries, half lightly mashed 
  • 2 packets (30 biscuits) Iced VoVo Sandwiches

Method:

  1. In a large bowl, combine Greek yoghurt, maple syrup, vanilla and raspberries.
  2. In your Décor container, place VoVo biscuits (plain side facing upwards) in rows until the base of the container is lined with biscuits. 
  3. Pour in yoghurt mixture and use a spatula to smooth out. 
  4. Place remaining VoVo biscuits (plain side downwards) on top of yoghurt until the yoghurt is covered. 
  5. Place in the freezer and allow to freeze for a few hours or overnight. 
  6. Remove from freezer, press out of container (you may need to wait for it to soften for a few minutes), chop VoVo Fro Yo sandwiches by cutting around the cookie. 
  7. Enjoy right away or allow to melt slightly.
