Peach, Prawn & Blue Cheese Salad
This refreshing salad pairs sweet, juicy peaches with tender prawns and creamy blue cheese – a perfect summer dish with a touch of indulgence. This salad is a vibrant mix of textures and flavours – perfect for any summer occasion!
Ingredients:
- 300g cooked prawns, peeled and deveined
- 2 ripe peaches, sliced
- 60g blue cheese, crumbled
- 4 cups mixed salad greens (rocket, baby spinach, or mesclun)
- 1/4 cup macadamia nuts, toasted and roughly chopped
- 1/2 avocado, sliced
- Fresh basil leaves, to garnish
Dressing:
- 3 tbsp extra virgin olive oil (Australian-grown)
- 1 tbsp apple cider vinegar
- 1 tsp honey
- Salt and pepper, to taste
Method:
- Prepare the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Assemble the Salad: In a large bowl or platter, layer salad greens, prawns, peach slices, blue cheese, avocado, and macadamia nuts.
- Dress and Garnish: Drizzle the dressing over the salad and gently toss to coat. Garnish with fresh basil leaves.
