Pea & Parmesan Risotto

Servings: 4

Ingredients:

  • 2 cups Arborio Rice, rinsed
  • 4 cups Vegetable Stock 
  • 1 Garlic Clove, finely minced
  • 1 tsp Oregano 
  • 1 tsp Thyme 
  • ¼ tsp Salt
  • Pinch Pepper
  • 1 cup Green Peas
  • ½ cup Parmesan Cheese, grated

To Serve

  • 2 Spring Onions, finely chopped
  • 1 Lime, juiced
  • 2 tbsp Butter
  • Fresh Thyme 
  • Extra Parmesan, grated

Method:

  1. Add rice, vegetable stock, garlic, oregano, thyme, salt and pepper to the container. Give the ingredients a stir and place in the microwave without the lid for 10 minutes. 
  2. Stir through peas and parmesan and place back in the microwave for a further 4 minutes. 
  3. Place the lid on the container with the vent open and allow to sit for 5 minutes. 
  4. Stir through spring onion, lime and butter. Sprinkle with thyme and parmesan upon serving.
