Pea & Parmesan Risotto

Ingredients:
- 2 cups Arborio Rice, rinsed
- 4 cups Vegetable Stock
- 1 Garlic Clove, finely minced
- 1 tsp Oregano
- 1 tsp Thyme
- ¼ tsp Salt
- Pinch Pepper
- 1 cup Green Peas
- ½ cup Parmesan Cheese, grated
To Serve
- 2 Spring Onions, finely chopped
- 1 Lime, juiced
- 2 tbsp Butter
- Fresh Thyme
- Extra Parmesan, grated
Method:
- Add rice, vegetable stock, garlic, oregano, thyme, salt and pepper to the container. Give the ingredients a stir and place in the microwave without the lid for 10 minutes.
- Stir through peas and parmesan and place back in the microwave for a further 4 minutes.
- Place the lid on the container with the vent open and allow to sit for 5 minutes.
- Stir through spring onion, lime and butter. Sprinkle with thyme and parmesan upon serving.
