
Pea & Parmesan Risotto
Servings: 4
Ingredients:
2 cups Arborio Rice, rinsed
4 cups Vegetable Stock
1 Garlic Clove, finely minced
1 tsp Oregano
1 tsp Thyme
¼ tsp Salt
Pinch Pepper
1 cup Green Peas
½ cup Parmesan Cheese, grated
To Serve
2 Spring Onions, finely chopped
1 Lime, juiced
2 tbsp Butter
Fresh Thyme
Extra Parmesan, grated
Method:
1. Add rice, vegetable stock, garlic, oregano, thyme, salt and pepper to the container. Give the
ingredients a stir and place in the microwave without the lid for 10 minutes.
2. Stir through peas and parmesan and place back in the microwave for a further 4 minutes.
3. Place the lid on the container with the vent open and allow to sit for 5 minutes.
4. Stir through spring onion, lime and butter. Sprinkle with thyme and parmesan upon serving.
