Modern Smashed Avocado

If you’re looking for homemade brunch inspiration, look no further! Try this modern twist of Smashed Avocado recipe created by @feedingfivefrugally This tasty combination of flavours will be sure to level up your breakfast.  


  • 1 avocado 
  • 2 eggs  
  • 1 lime 
  • 30g feta cheese 
  • 2 - 3 pieces your favourite bread
  • butter, salt, white pepper, olive oil 


  1. Cut the avocado in half, remove seed. Scoop out the insides into a small bowl, keeping the skins aside. In the bowl, add a squeeze of lime juice, a pinch of each salt & pepper. Mash until avocado is smooth. Add â…” of the feta & gently mix. Spoon the mixture back into the avocado skins.
  2. Toast the bread & spread with butter
  3. Poach the eggs, using the 3-in-Egg Cooker 
  4. Follow directions on pack - it takes 60sec to cook! Place an egg on top of each avocado & sprinkle with remaining feta.
  5. Serve with bread on the side
  6. Garnish with your favourite fresh herbs, or whatever herbs you have in the gardenWe've used fresh dill.
