Modern Smashed Avocado
If you’re looking for homemade brunch inspiration, look no further! Try this modern twist of Smashed Avocado recipe created by @feedingfivefrugally This tasty combination of flavours will be sure to level up your breakfast.
Ingredients
- 1 avocado
- 2 eggs
- 1 lime
- 30g feta cheese
- 2 - 3 pieces your favourite bread
- butter, salt, white pepper, olive oil
Method:
- Cut the avocado in half, remove seed. Scoop out the insides into a small bowl, keeping the skins aside. In the bowl, add a squeeze of lime juice, a pinch of each salt & pepper. Mash until avocado is smooth. Add â…” of the feta & gently mix. Spoon the mixture back into the avocado skins.
- Toast the bread & spread with butter
- Poach the eggs, using the 3-in-1 Egg Cooker
- Follow directions on pack - it takes 60sec to cook! Place an egg on top of each avocado & sprinkle with remaining feta.
- Serve with bread on the side
- Garnish with your favourite fresh herbs, or whatever herbs you have in the garden. We've used fresh dill.
