Pumpkin Loaf

This pumpkin loaf recipe is a great way to enjoy the rich, seasonal flavor of pumpkin in a comforting and versatile baked treat. Ideal for breakfast, afternoon tea, or a sweet snack, this loaf combines the earthy sweetness of pumpkin with a hint of warm spices.
Ingredients:
- 2 cups plain flour
- 480gms butternut pumpkin
- ½ teaspoon salt
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp ground cloves
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- ¾ cup unsalted butter, softened
- 1½ cups white sugar
- 3 Medium sized eggs
- Pepita Seeds
Prep
- Peel pumpkin and remove seeds. Chop into chunks, and boil until well cooked. Drain water, puree & let cool to room temperature
- Preheat oven 160C and place rack in middle position
- Grease loaf pan with butter and dust with flour
Method
- In a medium bowl, combine the flour, salt, baking soda, baking powder, cloves, cinnamon, & nutmeg. Whisk until well combined; set aside.
- In a separate bowl, add butter & sugar. Use an electric beater on medium speed until just blended. Add the eggs one at a time, beating well after adding each. Beating until light & fluffy. Add pumpkin and beat until just combined.
- Add the flour mixture & mix on low speed until combined.
- Pour into the greased pan & sprinkle with pepita seeds. Place into the oven 65 – 75 minutes, or until a skewer inserted into the centre comes out clean.
- When removed from oven, let it cool in the pan for 10 min, then turn out onto a wire rack to cool completely.
