Blueberry Pancakes

Serves: 8 pancakes

Ingredients:

  • 1 cup Self-Raising Flour
  • ¼ cup Caster Sugar
  • 1 cup Milk
  • 1 Egg
  • 2 tsp Lemon Juice
  • 125g punnet Blueberries


Method:

  1. In a large bowl, combine self-raising flour and caster sugar.
  2. Add milk, egg, and lemon juice to the bowl and whisk until the batter is combined.
  3. Pour the batter to the desired pancake size onto a greased frying pan.
  4. Flip once lightly browned on one side. Cook until the opposite side is also browned.
  5. Serve with maple syrup, lemon, and blueberries.
