Serves: 8 pancakes
Ingredients:
- 1 cup Self-Raising Flour
- ¼ cup Caster Sugar
- 1 cup Milk
- 1 Egg
- 2 tsp Lemon Juice
- 125g punnet Blueberries
Method:
- In a large bowl, combine self-raising flour and caster sugar.
- Add milk, egg, and lemon juice to the bowl and whisk until the batter is combined.
- Pour the batter to the desired pancake size onto a greased frying pan.
- Flip once lightly browned on one side. Cook until the opposite side is also browned.
