Banana Bread

Serves: 8 slices
Ingredients:
- 2 Eggs
- ½ cup Milk
- 125g Butter, melted
- 2 cups Self-Raising Flour
- ½ cup Brown Sugar
- 1 tsp Cinnamon
- ¼ tsp Salt
- 3 Overripe Bananas, mashed
- 1 extra Banana, sliced into coins (optional decoration on top)
Method:
- Preheat oven to 180°C and prepare a loaf tin.
- Whisk eggs, milk, and melted butter in a bowl until combined.
- In a separate large bowl, combine self-raising flour, brown sugar, cinnamon, and salt.
- Add the wet ingredients to the dry ingredients and stir to combine.
- Fold in the mashed bananas.
- Pour the mixture into the prepared loaf tin.
- For decoration, place banana slices on top of the mixture and gently press them in.
- Bake for approximately 50–55 minutes or until a skewer inserted comes out clean.
- Remove from the oven and allow to cool before slicing.
