Serves: 8 slices

Ingredients:

  • 2 Eggs
  • ½ cup Milk
  • 125g Butter, melted
  • 2 cups Self-Raising Flour
  • ½ cup Brown Sugar
  • 1 tsp Cinnamon
  • ¼ tsp Salt
  • 3 Overripe Bananas, mashed
  • 1 extra Banana, sliced into coins (optional decoration on top)


Method:

  1. Preheat oven to 180°C and prepare a loaf tin.
  2. Whisk eggs, milk, and melted butter in a bowl until combined.
  3. In a separate large bowl, combine self-raising flour, brown sugar, cinnamon, and salt.
  4. Add the wet ingredients to the dry ingredients and stir to combine.
  5. Fold in the mashed bananas.
  6. Pour the mixture into the prepared loaf tin.
  7. For decoration, place banana slices on top of the mixture and gently press them in.
  8. Bake for approximately 50–55 minutes or until a skewer inserted comes out clean.
  9. Remove from the oven and allow to cool before slicing.
