
Apple Crumble Muffins
Say hello to your new favourite Apple Crumble Muffin recipe. This apple muffin recipe is a delicious on the go breakfast, lunch box filler or snack. It’s a quick and easy recipe that’s perfect for any occasion, from birthdays to weekend baking sessions.
Serves: 10 muffins
Ingredients:
Muffin Base:
- 2 cups Self-Raising Flour
- ¾ cup Brown Sugar
- 1 tsp Cinnamon
- 1 Egg, whisked
- 1 cup Milk
- ¼ cup Olive Oil
- 1 tsp Vanilla Extract
- 3 Apples, chopped
- ½ cup Walnuts, finely chopped
Crumble Topping:
- ¾ cup Rolled Oats
- ¼ cup Butter
- ¼ cup Brown Sugar
- ½ tsp Cinnamon
Method:
- Preheat oven to 180°C and grease a muffin tin.
- In a large bowl, combine self-raising flour, brown sugar, and cinnamon.
- Create a well in the centre, add egg and pour in the milk, olive oil, and vanilla. Stir to combine the mixture.
- Fold in the chopped apples and walnuts.
- In a separate bowl, prepare the crumble topping by mixing rolled oats, butter, brown sugar, and cinnamon.
- Divide the muffin mixture evenly into the muffin tin and sprinkle the crumble topping over each.
- Bake for 20–25 minutes or until the crumble turns golden and a skewer inserted into the muffins comes out clean.
