Sushi Bake

If you love sushi but want a simpler way to enjoy it at home, this sushi bake recipe is the perfect solution. Layered with seasoned sushi rice, creamy seafood and savoury toppings, it delivers all the flavours of your favourite sushi rolls in a warm, oven-baked dish.
Perfect for easy entertaining or a quick family dinner, this sushi bake is designed to be scooped onto seaweed sheets for a fun, shareable way to enjoy sushi without the fuss of rolling.

Ingredients:

  • 2 salmon fillets, cooked
  • 2 tbspjapanesemayo
  • 1 tsp sriracha
  • 1 tsp soy sauce
  • 1 spring onion, chopped
  • 1 cup sushi rice, cooked
  • 3 tbsp sushi seasoning
  • 2 tbsp furikake seasoning
  • Japanese mayo
  • Teriyaki sauce
  • Sriracha mayo


For serving:

  • Seaweed snacks
  • Cucumber 
  • Avocado 


Method:
Cook sushi rice according to packet directions, mix through sushi seasoning and allow to cool.
In a medium bowl, combine cooked salmon, mayo, sriracha, soy sauce and spring onion. Mix until well combined.
Preheat oven to 180C.
In a large baking dish (we used Decor’s 1.5L Premium Glass Clips container) add sushi rice and press down to form an even, compact layer. Top with furikake seasoning and then add the salmon layer, pressing down until smooth.
Bake for 20 minutes until the top is nice and golden. Top with lines of mayo, teriyaki sauce and sriracha. 
Serve with seaweed snacks, cucumber and avocado.
