Spring Frittata

Enjoy this vibrant and delicious frittata, perfect for brunch or a light Spring dinner. Packed with sweet potato, fresh herbs, and creamy feta, this dish is not only a feast for the eyes but also a nourishing option for any occasion. Easy to prepare and bursting with flavour, it makes use of seasonal ingredients.

Ingredients:

  • 1 cup Sweet Potato cut into cubes 
  • Olive Oil, drizzled 
  • 6 eggs, whisked 
  • 1 1/4 cup milk
  • 1/4 cup basil leaves
  • 1 tbsp Dill roughly chopped 
  • 1 tsp garlic powder 
  • 1 tsp salt
  • 1/4 tsp pepper 
  • 1 cup feta cheese cubes
  • fresh dill & basil for garnish


Method: 


  1. Preheat oven to 180 degrees.
  2. Add sweet potato to a baking tray, drizzle with olive oil and roast 20 minutes.
  3. Meanwhile, whisk eggs and milk in your decor glass container until combined.
  4. Stir through basil, dill, garlic, salt and pepper.
  5. Add roasted sweet potato and feta to container, ensuring to spread out.
  6. Place in the oven (without the lid), and bake for 35-40 minutes or until egg is firm.
  7. Serve topped with more fresh dill and basil.

TOP TIP: Simply serve & store in your Vent & Seal container that easily transfers from the oven to the table and once cooled, store with the lid on in the fridge!
