Spring Frittata
Enjoy this vibrant and delicious frittata, perfect for brunch or a light Spring dinner. Packed with sweet potato, fresh herbs, and creamy feta, this dish is not only a feast for the eyes but also a nourishing option for any occasion. Easy to prepare and bursting with flavour, it makes use of seasonal ingredients.
Ingredients:
- 1 cup Sweet Potato cut into cubes
- Olive Oil, drizzled
- 6 eggs, whisked
- 1 1/4 cup milk
- 1/4 cup basil leaves
- 1 tbsp Dill roughly chopped
- 1 tsp garlic powder
- 1 tsp salt
- 1/4 tsp pepper
- 1 cup feta cheese cubes
- fresh dill & basil for garnish
Method:
- Preheat oven to 180 degrees.
- Add sweet potato to a baking tray, drizzle with olive oil and roast 20 minutes.
- Meanwhile, whisk eggs and milk in your decor glass container until combined.
- Stir through basil, dill, garlic, salt and pepper.
- Add roasted sweet potato and feta to container, ensuring to spread out.
- Place in the oven (without the lid), and bake for 35-40 minutes or until egg is firm.
- Serve topped with more fresh dill and basil.
TOP TIP: Simply serve & store in your Vent & Seal container that easily transfers from the oven to the table and once cooled, store with the lid on in the fridge!
