Up Your Salad Game

You don’t make friends with salad? Change your tune with one of these zesty salads! 

Decor Pasta Salad: 

Makes 4 servings 

Ingredients:

  • 1 can of chickpeas
  • 250g spelt pasta, cooked 7min
  • 1 Lebanese cucumber
  • 1/2 red onion
  • 1/4 cup pistachios
  • 100g feta
  • olive oil, lemon juice, pepper, salt
  • Handful fresh parsley

Method:

  1. Toss the chickpeas with a splash of oil, salt and pepper and roast for 20 minutes in the air fryer or oven until crispy.
  2. Meanwhile, cook the spelt pasta according to packet instructions.
  3. Allow both the pasta and chickpeas to cool.
  4. Chop the onion and cucumber into small pieces.
  5. In the Decor Store & Seal bowl, combine pasta, onion, and cucumber. Add pistachios and crumbled feta and stir to combine.
  6. Drizzle with olive oil, lemon juice, pepper and salt and toss through.
  7. Top with crispy chickpeas and fresh parsley and serve.

 

Green potato salad:

Makes 4 servings 

Ingredients:

  • 600 grams potato
  • 400 grams peas
  • 400 grams edamame
  • 200 grams feta
  • 2 bunches mint, leaves picked
  • 1 cup yogurt
  • 2 springs of fresh dill, finely diced
  • **Optional: seasoning of your choice.

Method:

  1. Preheat oven to 200°C.
  2. Slice potato into bite size pieces.
  3. Season and roast potato for 25 minutes or until cooked.
  4. While your potato is cooking, bring a saucepan to the boil and add your peas & edamame.
  5. Cook under tender (approx 2-3 minutes).
  6. Drain and cool under cold running water.
  7. Make your dressing by combining the dill, yogurt and feta together.
  8. Once your potatoes have finished cooking, allow to cool, and mix all ingredients together in bowl. Serve with dressing.

We’ve used the Fresh Seal Clips 600ml container to store the dressing.


Peanut Noodle Salad:

Makes 4 servings 

Ingredients:

  • 2 cups udon noodles cooked and cooled
  • 375g protein of your choice (chicken, tofu or beef)
  • 1/2 cup red cabbage
  • 1 red capsicum, sliced
  • 1 carrot, ribboned
  • 1/2 cup coriander, diced
  • 1 bunch diced broccolini
  • 1/4 cup peanuts, crushed

Dressing:

  • 1/4 cup natural peanut butter
  • 1/2 cup water
  • 2 tbsp soy sauce
  • 2 tbsp sweet chilli sauce
  • 1 lime, squeezed

Method:

  1. Add all ingredients into Decor Seal & Store bowl. Prepare the dressing in the Decor Cook jug and whisk until smooth. Pour over top, toss, and enjoy!
